Hiking…AKA…My Favorite Way to Burn the Calories!

I LOVE HIKING. The views! The nature! Its a great workout and amazing stress/anxiety reducer.

This all started when I was a kid and going for nature walks in the local forest preserve and up in the forest by my Grandma’s house in northern Michigan.

Every since then I have loved going out and being in the woods. Its pretty flat here in Northern Illinois, but we have a couple places that we can hike. Starved Rock and Matthiessen State Parks are somewhat local and very beautiful and have plenty of areas to hike, climb and many stairs to trek to really get a sweat going. If I can’t get out there then I go to the local forest preserves with the Husband and/or Charlie for a nature walk.  Here are some pics of our adventures through the US!

Matthiessen State Park in Utica, IL.

Really cool caves too!!

Close by, and more populated, is Starved Rock

Starved Rock

Took Charlie there after he was born, he loved it!

When I go on vacation, my number one thing that goes on the roster is Hiking…followed shortly by all the awesome foodie places and breweries/wineries.

Oahu, Hawaii….oh man, I loved going there, can’t wait to go back someday! (and yes…these are pictures…of pictures…)

IMG_3572 IMG_3574 IMG_3575

I cant get this one to flip for some reason DANG IT! But that’s a cliff jump into a lagoon! SO FUN!!!!!! (although I didn’t listen to my cousin and point my toes..kinda landed on my butt on the water and had a HUGE bruise, but so worth it!)IMG_3573

Colorado….The arena at Red Rocks…can imagine having this around to do stairs! IT WOULD BE AWESOME!

My absolute favorite to this day…is Glacier National Park in Montana

Highline Trail…This was about 11 miles long, total elevation gain of 1950 ft…

Ran into some goats!

And saw a bear cross the road….srsly…

The hike Iceberg lake..about 10 miles..1275 ft elevation gain with insane views

an amazing lake at the end….with icebergs….the water was um..chilly…(and deceiving! to get to that iceberg I had to wade in water that was above my waist!)

Iceberg IMG_20130714_143539_834

We also did the Avalanche Lake hike, this one was shorter at about 4.5 miles with a 730 elevation gain, but it was amazing. This was on the other side of the mountain pass and it was a totally different atmosphere. Very green. Lots of moss and huge trees. It was so pretty, and there we these birds that would whistle..and it srsly sounded like a coach whistle, so weird!

Although about 2 months later I got to post this pic! Almost named one of the twins Montana!

I have also hiked around Yosemite in California and parts of Zion National Park in Utah but I so want to go back to all of these and then explore tons more amazing sites! I have to hit the Appalachians still and really want to go out to Oregon and Washington State…Oh the long list of places I have to hike still…and then…maybe Europe! Thailand! Japan! Manchu Picchu! who knows!!! Where has everyone else been? Where would you recommend goes to the top of the hiking list?

Air Vents and Breakfast…AKA Super Secret Treasure Troves and Messy Faces

I don’t know what it is about the air vents…but the boys are fascinated with them. They love putting random stuff in there. Maybe its the ‘ping’? Maybe its the possibility of the items going to a place unknown? Narnia? Albion? Hyrule? Middle Earth? Maybe they think its like in Nemo and all drains lead to the ocean, only this is an air vent so maybe it leads to space? Who knows. Anyways, I find some very interesting stuff in there when I do my periodic clean outs. Here are the results of this weeks vent clean up.

The usual: Legos, cars, golf balls, random toys

FullSizeRender FullSizeRender_1

Random tidbits from my jewelry box…..I was looking for the bracelet for ages!

Stuffing…from there giant dragon tail…oy

Then I made french toast for the boys with blueberry sauce. It was a big hit! Pretty easy too. Basic french toast. Eggs, milk, cinnamon and nutmeg for the mix. Sourdough bread. Dip, and fry w butter. For the sauce, about a cup of frozen blueberries, 2 tablespoons sugar, 1 tablespoon corn starch. 1/4 cup water. Heat in a sauce pan for about 7 minutes and then pour on top. They loooooooved it!

IMG_3921 IMG_3930IMG_3908

And here is a pic of the twins from there 10 month photo session. I can’t believe they are already 10 months, they are going to be 1 soon! OMG MY BABIES! STOP GROWING!!!!!! STAY TINY AND CUTE AND CUDDLELY FOREVER PLEEEEAAASSSEEE!!!!

So I signed up for Tough Mudder along with The Husband and 3 of my cousins. Its May 9th. I have 4 months to train. Kinda nervous….OK A LOT NERVOUS. I’m glad I signed up for something that will give me major motivation to train and I’m loving that it is for Wounded Warrior Project. I have a family full of Marines and they have showed me how important this cause is. I am hoping to find more ways to get actively involved with this program. If you would like to donate to our fundraising page please go here (no pressure!!!!) and all proceeds go to the Wounded Warrior Project.

Some of the obstacles don’t look that bad……and I’m fine with mud (as any mom of boys would be)UNDERWATERTUNNELS MUD BirthCanal

But then there are these… Yeah gotta work on my upper body strength…

HamsterWheel Dead Ringer

And then these….Tear gas….Electroshock stuff….I hear its way better than it sounds though.

TearGas Electroshock

Then there are the team obstacles…no worries there though, we have 3 Marines on our team and a Firefighter that will be hopefully running with us too, so we will kick some butt!

Logger hangover

I want to get up to running 7-9 miles for endurance training, maybe interspersed with spin classes and rowing machine

LOTS….and I MEAN LOTS of upper body training. Pull up, monkey bars, push ups, free weights. I’m not going to ignore the lower body though, that one carrying the log is gonna require a good strong set of legs! So here we go….WISH ME LUCK…. PLEASES….OMG….

Paleo-ish Recipes- Stuffed Peppers

My husband found this recipe on and its pretty darn awesome….probably because there is bacon….who am I kidding…its cuz of bacon. mmmmmBACONmmmNOMNOMNOM

*AHEM* excuse me…so anyway its a Paleo-ish stuffed pepper recipe. Def check it out.

ASSEMBLE THE INGREDIENTS! Ground Beef, Yellow Onion, Sweet Potato (diced), Tomato (cubed), lots o garlic (diced), salt, white pepper, dijon mustard, chili flakes, oregano, thyme, parsley, ground coriander (Oh Lysander, bring me the Coriander), fresh ground nutmeg, chopped sun-dried tomatoes, olive oil,  a coupla eggs, bell peppers…and of course..bacon.

Next mix the stuffing: so pretty much everything but the peppers and the bacon…unless you want to throw some extra bacon in there…dammit why didn’t I think of that BEFORE! ARHGHGHGH! MISSED BACON OPPORTUNITY!…. next time…

Then stuff into peppers…duh 🙂 and give one of the babies a cuddle

IMG_3542      Milesand Me

Put stuffed peppers in a baking thingy/contraption/pan doohickey and top with BACON.

Put in the oven at 375 for about 45 minutes, then let sit for a song or two and then….NOMNOMNOM

The Husband did have a post cooking suggestion of blanching the peppers first. I dunno, it had bacon. I’m happy 🙂

My Little Helper…AKA Charlie Rocks

IMG_3228 IMG_3518

Charlie loves to help me out. He is always asking for a job to do. I love it. I know it won’t last forever, but I will relish in it for the meantime. Sometimes its helping out with his brothers, other times its helping out around the house. He was so excited this weekend when I let him help me shovel the drive way. Although I didn’t have an extra shovel for him, so he used the dust pan 🙂 And of course took a break to create snow angels.

IMG_3519 IMG_3526

He loves to clean off the cabinets, vaccuum (we even got him a mini dyson, so funny) and will be my runner if I need a diaper, spoon, anything. If the babies need more cheerios, he is on the job!  If Jack Jack is getting into the dog food…again…Charlie will swoop in and pick him up, bring him to the play mat and play with him. He loves making his baby brothers laugh. He DOES tattle on Ethan a lot. On one side, I don’t want him to be a tattle tale, and on the other, if I am feeding the twins and The Husband is on a conference call, its good to know that Charlie is watching out for Ethan and making sure he doesn’t do his usual crazy antics. Like couch gymnastics, toilet paper science experiments and the test to see what will fit in the vents (srsly, whenever its cold in their room I know its time to clean the vents out again. Stuffed animals, shirts, trucks, blankets….ridiculous).This kid is awesome. I don’t know what I would do without him!! Ethan lends a hand every now and then as well, but he’s still got time! Maybe I will have 2 lil helpers!

Jar o’ Booyah

This is so happening. I am creating my jar this weekend. LOVE THIS IDEA! And definitely including the Carlton Dance!

Bubbles and booyah

photo 1 (3) The Booyah Jar

Sometimes, I need a box of booyah To-Go. I’m just going to put this out there: when I travel (whether it be for work or vacation), I am really bad at coming up with my own bootcamp-esque workouts to supplement my runs (uh, and more importantly – even just motivating myself to just do them!). I’ve gotten much better, but I don’t always love having to sit and plan out a full body workout for each day in between sipping margaritas. Running is so easy – all you do is tie up your sneakers, put on some good jams and go. Since I’ve been working so hard and training for my half, with lots of strength training thrown into the mix, I don’t want to lose my guns when I go to Florida (I read some alarming statistics on how quickly you can lose muscle mass –…

Paleo-ish Snack: Toasted Pecans

Oh Pecans, how I love thee! Although now I cannot have you in a pie…I will have you in a….(OK I cant think of a rhyme, so)…snack.  Yeah I love pecans. My favorite diet friendly snack. I have found that I like them even better when toasted with a lil deliciousness on them. Toasting completely changes the consistency and its glorious.

Assemble the ingredients! Pecans, Canola Oil, Honey, Cinnamon and Salt

First I spray a pan with canola oil (please excuse the blackened pan…its been through a lot) and then spread the pecans out on it. Give them a spray as well.

I then gather ’em up in the middle, give a light drizzle of honey (if I am doing this as a dessert then a lil more honey), a couple shakes of cinnamon (or a lot) and a light sprinkle of salt. Toss around. Then, toast in the toaster oven on Toast for 3-5 minutes or bake in the oven at about 375 for 5-7 minutes. Definitely keep an eye on them…they go from perfectly toasted to burnt with in like 30 seconds.

Last step NOMNOMNOMNOM…but watch out for rugrats…they WILL attempt to eat them all.

Oh and speaking of rugrats,  I must report a moment of great pride. Charlie asked me to put sauteed mushrooms on top of his mac n cheese. (Yeah they are not on Paleo, they are on the whatever they will honkin’ eat diet) He LOVES mushrooms. Such a ham.

4Boys Headcount…AKA OK Where is Miles?

So when I let the kids play around the house, I have to do headcounts every couple of minutes so I know everyone is OK/ not cutting their hair with scissors/ getting into my make up/ seeing how much toilet paper will fit in the toilet ect. And I have found that having a  clean house greatly helps with this matter. But PLEASE….Its rare that all the rooms in the house are clean. Unless I’m having a party or taking pictures….but I can live in my dream world that the house is always clean and the boys are always behaving….yeah…can’t even pretend.

So anyway, during this headcount, a rugrat sometimes make me go on a baby hunt. And we have found that this sometimes also happens in pictures. So lets play… WHERE IS MILES?..AKA Holy Cats, my house is a mess.

Loads of wrapping paper means hidden babies everywhere
